Veggies and Rice Power Bowl
- Prepare Brown Rice as indicated on the package. For added flavor use vegetable stock rather than water.
- Toast cashews on thes top top for 4 minutes or in a 400 degree oven, your preference.
- In a drizzle of olive oil, cook the carrots until just soft, add the green beans, corn, and cook until tender yet crisp and then roll in the spinach until finished. Remove from pan.
- In the same pan, heat, add a drizzle of olive oil, add the garlic, ginger and white scallions. Cook for a minute or two, constantly stirring, add the brown rice and lightly fry for a couple of minutes. Add the vegetables back to the pan. Stir veggies and rice. Fold in toasted cashews, sesame seeds and green scallions.
